Golden Chicken N Taters

This is my second time making this one. My kids ate it so good last time I am bringing it back for a encore.

Ingredients

1 can cream of chicken soup

1 can cream of celery soup

1/2 cup water

1/4 tsp salt

1 package (32 oz) frozen tater tots

1 package (16 oz) frozen mixed vegetables (I used California style tonight but you can use any kind you wish)

2 cups cubed cooked chicken (I used canned chicken to make it quick and easy)

1 cup shredded cheddar cheese

Preparation

Combine the soups, water and salt, and mix well.

In a greased 13 x 9 baking dish, layer 1/3 of soup mixture, half tater tots, half vegetables, and half the chicken.

Repeat layers.

Top with the final 1/3 of the soup mixture, and sprinkle with cheese.

Cover and bake at 350 for 1 hour. Uncover and bake for 10 more minutes longer until golden brown.

This one is really easy and all kids like tater tots. My 8 year old had seconds both times I have made it. I am sure your kids will love it too. If you try this recipe please a comment below and let me know how you like it. Enjoy!

Elf on the Shelf: Day 5, 2012

Our Elf is always entertaining, but apparently last night he was entertaining Barbie to a swim in the candy dish and a mug of hot coco. Kevin was not really hiding today. He was basically just out in the open. It seems he is back to being a ladies man like last Christmas. The kids found him laying in the candy dish with Barbie. I think from now on this particular Barbie doll will be going by the name of Candy. It seems that they were just rolling around in the candy dish sipping on hot coco while snow men stood guard. At this point not much will surprise us.

It is never a dull moment with this crazy Christmas Elf. Who knows what he will do next! I think my husband will be sleeping with one eye open just in case.

Easy Beef and Corn Casserole

This is a really easy casserole. I really like the flavor of this one, and I am sure you will too. I would have to say that it is a new favorite.

Ingredients

1 Package (10 oz) fine egg noodles

1 lb ground beef

1 medium onion, chopped

1 can corn, drained

1 can tomato soup

1 cup water

1 cup diced Velveeta Cheese

1/2 medium green pepper, chopped

1 medium carrot, thinly sliced

1 tsp. salt

1/2 tsp pepper

Preparation

Cook Noodles according to the package and drain.

In a large skillet, cook beef, onion, and green pepper over medium heat.

Add  remaining ingredients.

 

Stir in noodles.

Transfer to a greased 13 x 9 inch baking dish.

Cover and bake for 325 for 30 min. Uncover and bake for 30 more min until bubbly.
