Halloween Chilli

You may wonder why in the world I would be sharing a recipe for Halloween Chilli in Spring. This is a recipe that a family friend makes for their Anual Halloween Party. Why chilli in May? Baseball season always seems to bring out the cold spring weather and this year has been no exception. It is May and we are having snow flurries as we prepare for a night with both a Little Leauge Baseball game and a Softball game. So bring on the warm hearty Chilli to warm us up. 

Ingredients:

  • 1 - 2 lbs. cooked Ground White Meat Turkey (You can make this with Ground Beef)
  • 1 large onion chopped
  • 2 cans Chilli Beans
  • 2 cans Kidney Beans
  • 2 cans Great Northern Beans
  • 1 can Tomato Paste
  • 1 -2 cans Petite Diced Tomatoes
  • 1 can Tomato Sauce
  • 1 Jar Spaghetti Sauce
  • 1 can Tomato Soup

Directions:

Brown meat in a large pan with a chopped onion.

Mix all other ingredients together in a large stock pot.

Add 1 - 2 Tablespoon Chilli powder and 1 Teaspoon cinnamon and mix into the chili. You can add more chilli powder and cinnamon to suit your taste.

Bring all ingredients to a boil and stir until chili is completely heated through. 

Philly Cheesesteak Sliders

Ingredients

1 package Hawaiian rolls
1/4 cup mayonnaise or Miracle Whip
1 tablespoon olive oil
1 green pepper, diced
1 onion, diced
1 pound steak, thinly sliced (You can substitute ground beef)
Salt and pepper, to taste
12 slices provolone cheese
3 tablespoons butter, melted

Directions

1) Preheat oven to 375 degrees Fahrenheit.

2) Cut the sheet of Hawaiian rolls horizontally with a serrated knife. Place bottoms in a parchment-lined, oven-safe baking dish. You want the parchment to hang over a bit. Spread mayonnaise or  Miracle Whip on rolls.

3) Heat olive oil in a skillet over medium-high heat. Add onions and green peppers. Cook for 5 minutes until tender. Add steak or ground beef. Season with salt and pepper. Cook steak until tender. Remove from heat.

4) Top rolls with 6 slices of provolone cheese, cooked steak, green peppers, onions and 6 more slices of provolone cheese. Place roll tops over steak and brush with melted butter.

5) Bake for 20 minutes, or until top has browned and cheese has fully melted.

6) Remove from oven, serve and enjoy!

Frito Taco Casserole

My husband found this on Facebook yesterday and we tried it out last night. It is a great quick and easy recipe that my kids loved. 

Ingredients

1 1/4 pounds ground beef
1 (16 oz.) can refried beans
1 (4 oz.) can mild green chiles, diced
2 cups cooked rice
2 cups cheddar cheese, grated, or Mexican cheese blend
2 cups Fritos (or corn chips of your choice), divided
1 cup salsa
1/4 cup water
1 medium yellow onion, chopped
1 (1.25 oz.) package taco seasoning
kosher salt and freshly ground pepper, to taste

Directions

  1. Preheat oven to 350º.
  2. In a large skillet over medium-high heat, brown beef until cooked through and no longer pink.
  3. Drain fat, reserving 1 tablespoon, and saute onions until softened and translucent. 6-8 minutes.
  4. Season with salt and pepper and add taco seasoning. Return beef to pan, then add salsa, chiles and water.
  5. Bring mixture to a boil, then reduce heat to low, cover and simmer for 5 minutes.
  6. Remove from heat and stir in rice, cheddar cheese, and refried beans, and transfer mixture to a 9×13-inch baking dish.
  7. Top with 1 cup Fritos and bake for 30-35 minutes, or until cheese is melted and dish is warmed through.
  8. Remove from oven, top with remaining Fritos and serve hot.
