Easy Thin Pancakes

This a very quick breakfast idea to get food on the table fast. My kids love these and ask for them every Saturday.

 

Ingredients

1/4 cup margarine (1/2 square) 1 cup flour 1 cup milk 3 Tablespoons sugar 3 eggs

Melt butter in your pan. While butter is belting mix all other ingredients.

When butter is melted pour it into batter.

Here is a trick, when the pancakes are ready to flip they will have little bubbles in the middle. (That little trick is not very helpful for a blind girl)

As you can see these pancakes are a lot like crapes. We use all kinds of toppings on them.

My kids love to have them with Cinnamon and Sugar. Peyton call them "Pixie Dust Pancakes".

When we top them with cinnamon and sugar the kids will roll them up and eat them.

You can also top them with fruit or jam and a little whip cream. I tried them with some Rasberries from out back yard. If you tries these let me know in the Comments below how your kids like them. Enjoy!

Chicken with Corn Sauce

We made this for the first time and we absolutely loved it. Really any time you add bacon to a recipe you just cant go wrong. The Corn sauce tastes amazing.

Ingredients

4 chicken breasts

3 slices of bacon

Corn Sauce

3 oz cream cheese softened

1/4 cup Milk

1 cup sour cream

1 teaspoon dried onion flakes

1/2 teaspoon salt

1/4 teaspoon pepper

1 Can whole kernel corn (drained)

Place chicken on broiler pan. Broil chicken for 4 minutes. Add bacon alongside. Broil, turning chicken and bacon once, for 10 minutes longer; drain bacon on paper towels.

For corn sauce, mix cream cheese and milk in a saucepan over low heat. Heat, stirring, until cream cheese melts; remove from heat. Add sour cream, onion flakes, salt, pepper and corn.

Heat corn sauce to serving temperature over medium heat, about 3 minutes.

Cut chicken into 1/4 inch slices. Place on a serving platter.

Spoon corn sauce over chicken. Crumble bacon and sprinkle over top.

Chicken Bundles

This is a very quick and easy meal. The cleanup is quick as well.

Ingredients

1/4 cup vegetable 4 small russet potatoes, sliced 1 green bell pepper sliced 1 red bell pepper sliced 2 red onions sliced 8 boneless chicken breasts 1 teaspoon salt 1/4 teaspoon pepper

Cut 8 pieces of aluminum foil. Brush the foil with vegetable oil.

Divide potatoes, peppers, and onions evenly on the foil. Drizzle with oil.

Place chicken Brest on top of vegetables. Drizzle the remaining oil on top of chicken. Sprinkle with salt and pepper. Fold foil around the chicken and vegetables and secure tightly.

Grill or broil bundles until the chicken is cooked through and is tender. In the broiler it took about 30 minutes. To serve just cut an X in the top of the foil.

As you can see this is so quick and easy and just tastes amazing. My kids ate the chicken and potatoes but were not a big fan of the peppers. Next time I will replace the peppers with carrots for them.
