The Elf on the Shelf: Day 17

 

Has it really been 17 days that our Elf has been causing mischef at our house? The time is really flying. Christmas will be here before long. Kevin was really easy to spot today. He was hanging out in Peyton's Pink Princess Sock. He was still sporting his fancy Tux but was not hanging with the ladies this time. Peyton was actually disappointed that he was not with Barbie. She thought that they made a good couple. Kai was just disappointed that he was not hiding in his sock. It is funny to listen to all the little conversations that the kids have about Kevin. They speculate where he will hide next, or what Barbie he likes most. They were discussing how jealous Ken must be. Really, what dose a 7 and 3 year old know about being jealous? What will he do next? I guess we will find out tomorrow...

Easy Crockpot Potato Soup

This will be my second Crockpot recipe in a row. I love them because they are so easy and quick. One of my good friends shared this recipe with me a while ago. She has it posted on her blog as well. This is my second time making it. The kids really liked it. It is super easy and takes like less than 5 min to prepare.

1 30 oz. bag of frozen, Shredded Hash Browns

3 14oz. cans of Chicken Broth

1 can of Cream of Chicken Soup

1/2 cup Chopped Onion

1/4 tsp. Ground Pepper

1 pkg. Cream Cheese

 

In a crockpot, combine everything EXCEPT for the cream cheese. Cook for 6-8 hours on low heat.

 

 

About 1 hour before serving, add cream cheese and keep heated until thoroughly melted.

 

 

Top with cheese and bacon bits.

My little girl Peyton had three bowls of this tonight, and Kai had two. I think you can qualify that as a homerun with my family. This is really good. Brandon suggested that cubed ham and a can of whole corn would be a really good addition. I may try that next time. Let me know what you think. Enjoy!

Golden Chicken with Noodles

My kids gave me a Campbells Soup Recipe Tin for Christmas last year. Every recipe that we have tried from it has been really good. I wanted a really easy Crockpot recipe I could throw in and be done with. So I decided to try out this Golden Chicken and Noodles recipe. It was really easy and the family loved it.

Prep time is about 5 minutes. Cooking time in the Crockpot  is 7 to 8 hours on low, 4 to 5 on high.

2 Cans of Campbells Cream of Chicken Soup

1/2 Cup Water

1/4 Cup Lemon Juice

1 Tablespoon Dijon Mustard

1 1/2 teaspoon Garlic Powder

8 Large Carrots, Sliced

8 Skinless Boneless Chicken Brest Halves

Cooked Egg Noodles

Chopped Fresh Parsley

1. Stir the soup, water, lemon juice, mustard, garlic powder and carrots in your Crockpot. Add the Chicken and spoon the soup mixture so that it covers the Chicken.

2. Cover and cook on Low for 7 to 8 hours or until the chicken is cooked through. You can also cook this dish on high for 4 to 5 hours.

3. Serve over Cooked Egg Noodles. Sprinkle with the parsley.

This will make 8 servings.
