Remix: Chicken & Stuffing Manicotti

This is actually the very first recipe that I ever put on my blog. It was the first part of December when I made it last. I decided that I wanted to share it again so all my new friends would be able to try it. It is just yummy and my kids love it. This time I had Brandon take a few pictures so you can see this recipe in action. This is what you will need...

1 (8oz) box of Manicotti or Jumbo Shells (Jumbo shells are actually easier for me to fill and they work great)

1 can of Cream of Chicken Soup

1 (16oz) box of Stove Top Stuffing Mix

6 boneless Chicken Breasts, cooked and cubed

2 cups of grated cheddar cheese

1 1/2 cups of sour cream

Boil the Manicotti or Jumbo Shells for 12 min; brain and cool. I use the Jumbo shells because it is so much easier for me to fill them. When I use Manicotti I always stuff them to full and they just break on me.

Prepare stuffing according to the box instructions. Mix together soup, sour cream and 1 cup of cheese. Reserve 1 cup mixture and set aside.

Combine chicken, stuffing, soup/cheese mixture and stuff shells with mixture. Pour remaining soup mixture over manicotti and sprinkle with 1 cup cheese.

Bake @ 350 for 30 min.

Chicken Milano

This is one of my favorite meals, and it has been ages sense I have made this for my family. It is really easy to make and you will be done from start to finnish in less than an hour. I love chicken and I love cheese so this is like a heavenly feast. This is all you need for this little Italian meal.

6 Skinless, boneless Chicken Breasts

1/2 Cup Flour

2 eggs, beaten

1 Cup Italian Bread Crumbs

1/2 Cup Butter or Margarine

1 Cup Marinara Sauce

1 Cup Half-and-half

1/2 Cup Mozzarella Cheese Sredded

1/2 Cup Swiss Cheese Shredded

1/4 Cup Parmesan Cheese Grated

Roll each chicken breast in flour, then dip in beaten egg. Now roll in bread crumbs to coat well.

Heat up butter in a large skillet over medium high heat, and add chicken. Cook until browned on all sides, about 10 minutes. Mix Marinara sauce and half-and-half in a small bowl. Pour sauce into baking dish.

Now arrange chicken in the baking dish. Mix mozzarella, Swiss and Parmesan cheeses in a small bowl. Sprinkle cheese over chicken. Now spoon some of the sauce over the cheese covered chicken.

Bake covered with aluminum foil at 350 degrees until chicken is cooked through about for 30 minutes.

 

I always make pasta, green salad and garlic bread to go with this meal. I always have to have green salad with pasta, it must be a Olive Garden thing. This is one of my favorite meals so I have no clue why I haven't made this in so long. I hope you like it. Let me know if you try this in the comments. Enjoy!

 

Baked Farmhouse Chicken

I am super excited to share this one with you. I wanted to try a new recipe tonight so I came across this one. It was so good and so easy! This is the ingredients that you will need to make this masterpiece.

4 skinless, boneless, Chicken Brests

1 egg

1 teaspoon salt

1/4 teaspoon pepper

1 teaspoon vegetable oil

1 cup bread crumbs

1/4 cup flour

3 tablespoons butter

4 thin slices of ham

4 thin slices of swiss cheese

Preheat the oven to 400 degrees. Place the chicken breasts between two sheets of waxed paper or plastic wrap and pound with a meat mallet. Combine egg, salt, pepper, and oil in a shallow bowl. Mix well. Place the bread crumbs on a piece of waxed paper. Place flour on another piece of waxed paper. Dip chicken in flour, then egg, and then bread crumbs. Pat lightly so the curbs stick.

Melt butter in a large skillet over medium heat. Add chicken. Cook chicken, turning once, until browned, about 10 minutes.

 

Arrange Chicken in a medium baking pan. Top each piece with a slice of ham, then a slice of cheese. Bake until ham is hot and cheese is melted and bubbly, about 10 minutes.

We really liked this one. I am sure this is going to be on the short list of some of our favorite things to fix. It is not only easy but it is delicious. It reminded me a lot of the Malibu Chicken at Sizzler. Next time I think I would mix some Miracle Whip and mustard together and have a yummy dip to dip the chicken in.
