Easy Stuffed Peppers

I got some fresh peppers from my parents garden a few weeks ago and made some stuffed peppers.This is a very simple recipe that you will love. My kids were not a fan of the pepper but they sure loved the inside. This is all you will need.

1 pound ground beef

2 tsp Chopped Onion

15 oz Can Tomato Sauce

1 tsp Salt

1/2 tsp Garlic Salt

2 Cups Cooked Rice

6 Large Green Pepers

Cut the top off the top off the peppers and hollow them out. Blanch (boil) the peppers for 5 min. Brown the ground beef with the onion. Now add all the other ingredients and mix them together. Now stuff the peppers and put them in a baking dish. Cover with foil and bake at 350 for 45 min. Remove foil and then bake for an additional 15 min. I told you this was easy. Chicken Quesadillas

This is easy quick and I know it will be a hit with your family. We double the recipe because we go crazy over these Quesadillas.  This is all you will need to start a feeding frenzy.

1 Can Cream of Chicken Soup

2 Cups Chopped Cooked Chicken

3/4 Cups Shredded Cheddar Cheese

3/4 Cups Shredded Monterey Jack

1 Tbsp Chopped Jalapeño (optional)

8 Flour Tortillas

2 Tbsp Butter

1/2 Cup Salsa

1/2 Cup Sour Cream

Mix the Soup, cooked chicken, the two cheeses, and chopped Jalapeño into a sauce pan and cook over Medium heat until heated through. It takes about 5 minutes.Divide mixture among each tortilla, spreading to within 1/2 inch of edges. Fold over the filled tortillas. Melt butter in a large skillet over medium heat. Cook each tortilla until heated through and the tortilla is golden brown. Serve with salsa and sour cream.

To-die-for Pumpkin Chocolate Chip Bread

 

 

I saw this on Good things Utah the other day and decided to try it. Very good!

This is what you will need...

2 cups Canned Pumpkin Pie Mix 4 Eggs 1/3 cup Milk 1/3 cup Applesauce 1 t Vanilla 3 cups Sugar 3 ½ cups Flour 1 t Cinnamon 2 t Baking Soda 1 ½ t Salt 1 ½ cups Chocolate Chips 1 ½ cups Walnuts – chopped

Pre-heat oven to 325 degrees. Cream together canned pumpkin pie mix, eggs, milk, applesauce, vanilla and sugar. Sift together flour, baking soda and salt. Combine pumpkin mixture and dry ingredients; stir in chocolate chips and chopped walnuts. Evenly distribute batter into 3 well-butter loaf pans. Bake for 50-60 minutes. Allow pumpkin chocolate chip bread to cool in loaf pans for 15 minutes. After cooling in pans, remove bread and allow to cool completely before slicing. Slice, serve and ENJOY!
