Cheez-It Chicken
A few years ago we came across a cook book that Men's Health Magazine published called A Man A Can, A Plan. There is also a few sequels called a Second Helping, and a Microwave. So Brandon has the first book and the Second Helping. All the recipes have like three or four ingredients and are really fast and easy. It would have to be easy to be a cook book for guys to follow. Sorry I couldn't help myself. He has been trying to get me to make Cheez-It Chicken for a long time. Now that I am pregnant I have been craving Cheez-Its. So it was not hard to get me to finally give in and make it this time. This is what you need....
12 oz can of Evaporated Milk
4 boneless skinless chicken brests
1/2 Box of Cheez-It Crackers
10 oz can of chicken gravy (I made my own gravy)
1 1/2 TBSP Lemon Juice
1/3 Cup Flour
1/4 TSP Ground Pepper
1 egg beaten
Now this is all you need to do to prepare the Easy Cheesy meal...
In a large Ziplock bag mix the evaporated milk and lemon juice. Add the chicken, seal the bag, and refrigerate for 2 hours.
Dump the Cheez-Its into a ziplock bag, get the air out and then crush them into fine crumbs with the can of gravy.
Now put the flour, and pepper in one bowl. The beaten egg in another bowl, and the crushed Cheez-Its in a third. Roll the chicken in the flour, then egg, then the Cheez-It crumbs. Put the chicken on a baking sheet sprayed with non stick cooking spray, and bake for 25-30 minutes until chicken it fully cooked. Now heat up the gravy and you are ready to eat. I put this with some mashed potatoes and a green salad.
This one was really good. I think having the chicken soak in the evaporated milk made it really moist and juicy. Not a bad meal if I do say so myself. It is really easy to make. The kids liked it. What kid wouldn't eat up a meal when you have them help you crush up a bag of Cheez-Its to make it?
