Down-Home Macaroni & Cheese

 

I have been thinking a lot about my Grandma Howell lately. One of the things she would make that I just loved was her Macaroni and Cheese. I dont know of anyone that has her recipe but I have been craving it. So I set my husband Brandon out on a Google Quest to find me a great Macaroni and Cheese Recipe. We have found a bunch of them that we are wanting to try. We came across this one on the Kraft Foods Web Site. It sounded really easy so I thought I would give it a try tonight.

This is what you will need on hand...

 

 

1/4 cup butter or margarine, divided

1/4 cup flour

1 cup milk

1/2 lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes

2 cups elbow macaroni, cooked

1/2 cup KRAFT Shredded Cheddar Cheese

6 RITZ Crackers, crushed (about 1/4 cup)

Now lets make some cheesy goodness!

HEAT oven to 350°F.

Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Bring to boil; cook and stir 3 to 5 min. or until thickened. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.

Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.

Bake 20 min. or until heated through.

Really easy to make and didn't take a lot of time to prepare. I really liked this but it was not my Grandma's recipe. I will keep searching to find the right one. My little boy Kai loved it, and Brandon really liked it too. The crackers on top gave it a really good touch. If you try it let me know what you think.

Rosemary Chicken and Potatoes

This is an amazingly good recipe that I tried for the first time tonight. It was really easy and only took about 15 minutes to prepare and 30 minutes on top of that to cook. There is really noting to it. This is all you need...

2 tbsp Olive Oil

1 tsp Salt

2 tsp Paprika

1 1/2 tsp Cruched Rosemary Leaves

1 tsp Minced Garlic

1/2 tsp Ground Black Pepper

4 Chicken Brests

6 Red Potatoes cut into one inch cubes (1 1/2 lbs)

First mix oil, salt and all the spices in a large bowl. Add the Chicken and Potatoes. Toss it all together and coat well. Arrange chicken and potatoes in a single layer on foil-lined 15x10 inch baking pan sprayed with non-stick cooking spray.

 

Cook uncovered at 425 for 30 min or until Chicken is cooked through and Potatoes are tender, turning Potatoes occasionally. It smelt amazing coming out of the oven. The Chicken was so good! It was so juicy and the flavor was amazing. I know you will love this one. Put it on the short list of recipes to try out on your family. Let me know how you like it!

Grandma Howell's Spiced Tang

My Grandma Howell would always make this drink when I was at her house on a cold winter day. The other day I just decided I would hunt down the recipe because I was having one of those pregnancy cravings and wanted something warm to warm me up. This is such a easy recipe and it is so yummy. My mom said that my Grandma would sometimes call this Russian Tea. You can call it what ever you want but I will just call it Amazing!

This is all you need to make this Holiday Treat

2 Cups of Tang

1 3oz Sweetened Lemonade Mix

1 1/2 Cups of Sugar

Tsp of Cinimon

1/2 Tsp of Ground Cloves

Mix it all up and you will have enough mix to to keep you warm for a few weeks.

We have found we like to mix 2 Tablespoons to one cup of hot water. That gives you just enough spice to warm you up. Enjoy!
