The Elf on the Shelf: Day 9

The Kids found Kevin hanging on for dear life from our celling fan. This Elf seams to like live his life on the wild side. Random trips to Vegas, ransom notes, and now we find out he is a swinger.

The first thing Kai wanted to do was turn on the fan and see if he could hang on. I have a feeling that Kevin is trying to lay low and not cause so much trouble. I am sure that any day now his pranks will start up again.

Down-Home Macaroni & Cheese

 

I have been thinking a lot about my Grandma Howell lately. One of the things she would make that I just loved was her Macaroni and Cheese. I dont know of anyone that has her recipe but I have been craving it. So I set my husband Brandon out on a Google Quest to find me a great Macaroni and Cheese Recipe. We have found a bunch of them that we are wanting to try. We came across this one on the Kraft Foods Web Site. It sounded really easy so I thought I would give it a try tonight.

This is what you will need on hand...

 

 

1/4 cup butter or margarine, divided

1/4 cup flour

1 cup milk

1/2 lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes

2 cups elbow macaroni, cooked

1/2 cup KRAFT Shredded Cheddar Cheese

6 RITZ Crackers, crushed (about 1/4 cup)

Now lets make some cheesy goodness!

HEAT oven to 350°F.

Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Bring to boil; cook and stir 3 to 5 min. or until thickened. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.

Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.

Bake 20 min. or until heated through.

Really easy to make and didn't take a lot of time to prepare. I really liked this but it was not my Grandma's recipe. I will keep searching to find the right one. My little boy Kai loved it, and Brandon really liked it too. The crackers on top gave it a really good touch. If you try it let me know what you think.
