Baked Farmhouse Chicken

I am super excited to share this one with you. I wanted to try a new recipe tonight so I came across this one. It was so good and so easy! This is the ingredients that you will need to make this masterpiece.

4 skinless, boneless, Chicken Brests

1 egg

1 teaspoon salt

1/4 teaspoon pepper

1 teaspoon vegetable oil

1 cup bread crumbs

1/4 cup flour

3 tablespoons butter

4 thin slices of ham

4 thin slices of swiss cheese

Preheat the oven to 400 degrees. Place the chicken breasts between two sheets of waxed paper or plastic wrap and pound with a meat mallet. Combine egg, salt, pepper, and oil in a shallow bowl. Mix well. Place the bread crumbs on a piece of waxed paper. Place flour on another piece of waxed paper. Dip chicken in flour, then egg, and then bread crumbs. Pat lightly so the curbs stick.

Melt butter in a large skillet over medium heat. Add chicken. Cook chicken, turning once, until browned, about 10 minutes.

 

Arrange Chicken in a medium baking pan. Top each piece with a slice of ham, then a slice of cheese. Bake until ham is hot and cheese is melted and bubbly, about 10 minutes.

We really liked this one. I am sure this is going to be on the short list of some of our favorite things to fix. It is not only easy but it is delicious. It reminded me a lot of the Malibu Chicken at Sizzler. Next time I think I would mix some Miracle Whip and mustard together and have a yummy dip to dip the chicken in. Poppyseed Chicken

This is what was cooking at the Rasmussen's house tonight. It is way easy to make and only has a few ingredients. The kids had a second helping of this tonight so I guess they will give it 2 thumbs up. This is all you need...

4-6 Chicken Breasts

1 can Cream of Chicken Soup

1 Cup Sour Cream

1 1/2 Stacks Ritz Crackers Crumbs

1 Cube of Melted Butter

2 TB Poppy Seeds

Cook chicken breasts by boiling them in salt water. Cut into bite-size pieces and place in a 9x 9 baking dish. Mix sour cream and soup and pour over cut up chicken. Mix crushed crackers with melted butter and Poppy seeds. Sprinkle on top of the chicken. Bake at 350 for 20-30 minutes. Double the recipe for a 9 x 13 pan. Now was that easy enough?

We have sticky rice with this meal most of the time. I added some Watkins Chicken Soup base to the rice this time to give it more flavor. If you try this one be sure to let me know in the comments and tell me what you think.

Chicken Quesadillas

This is easy quick and I know it will be a hit with your family. We double the recipe because we go crazy over these Quesadillas.  This is all you will need to start a feeding frenzy.

1 Can Cream of Chicken Soup

2 Cups Chopped Cooked Chicken

3/4 Cups Shredded Cheddar Cheese

3/4 Cups Shredded Monterey Jack

1 Tbsp Chopped Jalapeño (optional)

8 Flour Tortillas

2 Tbsp Butter

1/2 Cup Salsa

1/2 Cup Sour Cream

Mix the Soup, cooked chicken, the two cheeses, and chopped Jalapeño into a sauce pan and cook over Medium heat until heated through. It takes about 5 minutes.Divide mixture among each tortilla, spreading to within 1/2 inch of edges. Fold over the filled tortillas. Melt butter in a large skillet over medium heat. Cook each tortilla until heated through and the tortilla is golden brown. Serve with salsa and sour cream.
