Moroni BBQ Turkey

There is nothing better in the whole world that BBQ Turkey. I have grown up with it and it is one of my all time favorit things to eat at a Summer BBQ. I have yet to find a person that tries it that is not from that point in love with it.

This is what you will need to make the BBQ Turkey marinade...

 

Add together the following:

2 Cups Sprite

1 Cup Cooking Oil

1 Cup Soy Sauce

1 tsp Horseradish

 

You want to cut the turkey breasts into slices. Then they are ready to marinate over night.

We always keep our ice cream buckets because they make a perfect container to marinate BBQ Turkey. Now just put the container in the fridge over night. I always stur the turkey up every few hours to help the mixture to not separate. The Oil always want to float to the top, so sturing it will keep it mixed good.

After the Turkey has marinated for 24 hours you are ready to throw it on the grill. We use a brush and brush the marinade over the turkey as it cooks. It seams to make it stay really moist and juicy. You will love it!

Easy Meat Loaf and Twice Baked Ranch Potatoes

This is a two for one recipe post. We will be making a super easy meat loaf recipe, and a twice baked potatoes as a side. You will really like how quick and easy this meal will all come together. First you need to bake some potatoes. I baked mine at 400 degrees for one hour. After they are done take the potatoes out of the oven and turn the oven to 350 degrees to get ready for the meat loaf.

 

Here are the five ingredients you will need to get started....

1 lb. Ground Beef

3/4 Cup Evaporated Milk

1 package Lipton Onion Soup Mix

20 Soda Crackers, crushed

1 egg

Now mix all the ingredients and put them in an oven safe dish. Keep the remaining evaporated milk. We will use it to make the twice baked potatoes.

Now you will make the topping with the following ingredients...

1/4 Cup Ketchup

2 TB. prepared mustard

3 TB. Brown Sugar

Now mix the three ingredients together and spread on top of the prepared meat. Cook at 350 degrees for one hour.

While the Meat Loaf is in the oven it is time to prepare our twice baked potatoes. This is what you will need...

The remaining Evaporated Milk

Butter

Packet of Ranch Salid Dressing Mix

Cheese

And of corse you will need the baked potatoes

First you need to cut your baked potatoes in half.

Now scrape the inside of the potatoes into a bowl. Keep the peals because you will be filling them back up.

This is the tricky part. It is impossible to tell you an exact measurement of ingredients in twice baked potatoes because it really depends on how many potatoes you use and the size of the ones you use. This is the order of ingredients I used.

First I put in some evaporated milk in and start to mix the potatoes with a hand mixer. I mix them until they are a creamy consistency pouring in evaporated milk as needed.

Next I add some softened butter. Mix again with the mixer and put in butter as needed. Just tast it along the way and that will help you decide how much butter is needed.

Now I add in some of the ranch packet. I used 2 TB of the packet, but like the butter just use tast to determine how much to use.

When your taste buds are happy with your mixture you have concocted it is time to fill the potato skins. I fill them so that they are just filled above the sides of the skins. You will have a few skins that can be discarded. I had 2 that were unused. Now top them with cheese! Now comes the "twice" in twice baked potatoes. The potatoes need to heat up for about 30 min.

I put them in with the meat loaf for the last 30 min of the meat loafs cooking time. I works out great that way because they both were done and ready to eat at the same time. So yummy!

I really like the combination of the meat loaf and potatoes. They complement each other very well. I also added a little side salad. This meal is very easy and your family will love it. Polynesian Chicken

  You are going to absolutely love this recipe. My only declaimer with this one is that there are quite a few ingredients in this one, but it is an easy one as always. If I can make it with my eyes closed I am sure anyone can master this Pacific island favorite.

This is what you will need....

3/4 Cup Flour

2 Teaspoons Paparika

2 Teaspoons Salt divided

6 Chicken Breasts

1/4 Cup Butter

3/4 Cup Brown Sugar

1 Tablespoon Cornstarch

1 Teaspoon Ground Ginger

1 Can of Pineapple Chunks (Don't Drain)

1/4 Cup Vinigar

2 Tablespoons Soy Sauce

1 Green Bell Pepper (Julienned)

You will also need a cute little helper like I had tonight. Carter rarely will let me put him down to get anything done, so I try to keep him as close to the action as possable.

Preheat the oven to 400 degrees. Combine flour, paprika, and 1 teaspoon salt.

I had to show you this really nice shaker that Brandon found me that helps you evenly bread or flour meat. It is so nice! You just mix the breading in the bottom put you meat on the top and put on the lid and shake away. We found this contraption at Walmart and it is a life saver. We have used it with all kinds of meat and different types of breading. It gets it coated evenly and perfectly every time. If you dont have one just put the ingredients in a ziplock, add the chicken, and shake away.

After your chicken is coated and ready. Heat your butter in an overproof skillet over medium-high heat.

Add the chicken to the skillet. Cook until lightly browned on both sides. I cooked the chicken 5min on both sides turning it only once.

When you turn the chicken some of the breading may come off. I had Brandon coat the sections that came off with the extra breading. When it is golden brown you are ready to make the topping.

Now mix the brown sugar,cornstarch, ginger, and remaining salt in a medium saucepan. Now stir in the can of pineapple (with the juice), vinegar, and soy sauce. Then add the bell pepper.

Now spoon the sauce over chicken. Now you're ready to pop the skillet in the oven. We use a cast iron skillet because it is large enough to hold everything and that way you dont even need to move the chicken to a different pan. One less pan to clean is always a bonus to me. Now place the chicken in the oven uncovered for 30 min @ 400.

Every 10 min or so open up the oven and spoon the sauce over the chicken. This will keep the chicken moist and juicy. By the way this will make your house smell amazing. It smells so good that you wont be able to keep your family out of the kitchen while it cooks.

When your 30 min wait is up serve over white rice. If you can use sticky rice it is so much better. I hope you love this recipe as much as we do. It tastes so amazing you will crave it. As always please let me know how it turns out in the comments section below. Good luck!
