Chicken Parmesan

I have been wanting to make this for a long time. I love Chicken Parmesan at Applebee's and I found this recipe and just had to try it. It takes about 15 min to prepare and another 30 min to cook. So it is a quick and easy recipe to remind you family you are SuperMom.

You will need...

1/2 Cup Seasoned Bread Crumbs

3 Tablespoon Parmesan Cheese

4 to  6 Chicken Brests

1 Egg Braten

2 Tablespoon Margarine

1 Can Tomato Sauce

1/4 Teaspoon Dried Basil

1/8 Teaspoon Garlic

1/2 Cup Mozzarella Cheese

Start by preheating the oven to 350 degrees. Mix crumbs with 1 Tablespoon Parmesan in a shallow dish. Dip the chicken into beaten egg. Roll in crumbs mixture to coat.

Melt margarine in a large skillet over medium heat. Add the chicken. Cook chicken turning only once to keep the breadcrumbs from coming off of the chicken. Cook approximately 5 min. When the chicken is golden brown place it in a lightly greased baking sheet.

Add tomato sauce, basil, and garlic powder to the skillet that you just cooked the chicken in. Simmer for about 5 min or until the sauce slightly thickens.

Now spoon the sauce over the chicken.

Sprinkle with Mozzarella and remaining Parmesan.

Bake for 30 min.

The Chicken smells great when it comes out of the oven and your family wont need much coaxing to come to the dinner table.

I served this dish with spagetti noodles and Garlic Bread. Use the leftover sauce with the noodles. My kids and husband loved it. It will be a recipe that we will make again for sure. Ham Potato Chowder Remix

This is a recipe that I made and shared last year, but it is so good I had to share it again. We had a Christmas Party at our house on Thursday and we had some leftover ham. I thought it was a good idea to make some ham chowder. This is an easy recipe that will warm you up and tastes great.

This is the rundown of what you need.

4 large potatoes

2 TB butter

1/4 cup sliced green onion

1/2 cup chopped green pepper

2 cups of water

1 can of whole kernel corn

1/8 tsp pepper

1/4 tsp paprika

3 TB flour

2 cups milk

1 tsp salt

2 cups diced ham

Peel and dice potatoes. In large saucepan melt butter, add onions and green pepper. Cook until tender. Add potatoes, water and seasonings. Cover and simmer until potatoes are tender.

Make paste of flour 1/2 cup water. Add to potato mixture.

 

Add milk and cook until slightly thickened, stirring constantly. Stir in undrained corn and diced ham. Heat through.

Creamy Hash Browns (Funeral Potatoes)

We are having some friends over for dinner tonight for a little Christmas Party. We are having Spiral Ham, and nothing tasted better with ham that Funeral Potatoes. There are many variations of this dish and I have probably ten different recipes that people refer to as Funeral potatoes. This one is Corn Flake Free. Funeral Potatoes is a Mormon nickname for this type of potatoes because this is the type of potatoes that the Relief Society always serves when they help with lunches after funerals. I am sure the reason they are served is because they are so easy and so yummy. Real Confort food. I like this one because the whipping cream makes them creamy and so yummy. This is all you need....

1 1/2 packages of Shredded Hash browns

1 tsp Salt

1 Pint Whipping Cream

1/2 tsp Garlic Powder

Grated Cheese

Thats it! Now grease a 9 x 13 pan. Put in potatoes and sprinkle with salt and garlic powder. Drizzle wipping cream on top. Bake, uncovered, 350 degrees for 45 minutes. Take it out of the oven cover with grated cheese and bake for 5 more minutes until the cheese is melted. See that is quick and easy.
