This is an easy recipe that my mom made when I was growing up. It is one that I just throw together at the last second when dinner sneaks up on me.

It has three simple ingredients...

3 Cups of Macaroni

One Large Can of Tomato Soup

1 lb. of Hamburger

This is all you need to do...

Brown the Hamburger and drain off the grease. Boil the Macaroni and drain it.

Mix the Hamburger and the Macaroni together in the pan you boiled the Macaroni. Now pour in the tomato juice until you get the soup to your desired thickness, and bring it to a boil.

The Macaroni will sock up some of the tomato juice so you may need to add more to it later.

We always top the soup with a little shredded cheese. Our kids love this fast and easy soup. Let me know in the comments below how you like it. It really cant get much easier than this.

Easy Beef and Corn Casserole

This is a really easy casserole. I really like the flavor of this one, and I am sure you will too. I would have to say that it is a new favorite.

Ingredients

1 Package (10 oz) fine egg noodles

1 lb ground beef

1 medium onion, chopped

1 can corn, drained

1 can tomato soup

1 cup water

1 cup diced Velveeta Cheese

1/2 medium green pepper, chopped

1 medium carrot, thinly sliced

1 tsp. salt

1/2 tsp pepper

Preparation

Cook Noodles according to the package and drain.

In a large skillet, cook beef, onion, and green pepper over medium heat.

Add  remaining ingredients.

 

Stir in noodles.

Transfer to a greased 13 x 9 inch baking dish.

Cover and bake for 325 for 30 min. Uncover and bake for 30 more min until bubbly.

Easy Biscuit Topped Italian Casserole

This is a super quick and easy dinner idea that we tried tonight. It takes no time at all and it is a really warm yummy meal when it is cold out side.

Ingredients

1 pound ground beef

1 can tomato sauce

3/4 cup water

1/4 tsp pepper

1 package (10 oz) frozen mixed vegetables

2 cups shredded cheddar cheese

1 tube Pillsbury buttermilk biscuits

1 TB butter or margarine melted

1/2 tsp dried oregano

Preparation

In a large skillet cook beef and drain. Stir in tomato sauce, water and pepper. Bring to a boil. Reduce heat, cover and simmer for 15 minutes.

Remove from heat. Stir in vegetables and 1 1/2 cups cheese. Transfer to a greased 13 in x 9 in greased baking dish.

Split each biscuit in half. Arrange biscuits around edge of dish, overlapping slightly. Brush biscuits with butter and sprinkle with oregano.

Sprinkle remaining cheese over the meat mixture.

Bake uncovered, at 375 for 25-35 minutes or until the biscuits are golden.
