Cheese-Filled Chicken Breast

We made half with Jalapeños and half without for the kids. Then all you do it top with sour cream and guacamole.

Ingredients

Cheese-filled chicken

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 red bell pepper
  • 1 garlic clove
  • 2 tablespoons pickled jalapeños, finely chopped
  • ½ teaspoon ground cumin
  • 3¼ oz. cream cheese
  • 1⁄3 lb shredded cheese
  • salt and pepper
  • 4 tooth picks

Guacamole

  • 2 ripe avocados
  • 1 – 2 garlic cloves
  • ½ lime, the juice
  • 3 tablespoons olive oil
  • ½ white onion
  • 51⁄3 tablespoons fresh cilantro
  • 1 diced tomato
  • salt and pepper

For serving

  • 2⁄3 cup sour cream
  • ½ lb leafy greens or lettuce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Chop bell peppers and garlic finely. Sauté in oil until soft. Place in a bowl and let cool for a while.
  3. Add jalapeños, spices and both cheeses. Mix well.
  4. Cut partway, lengthwise through, along the thinnest part of the chicken so that you can open it like a book.
  5. Place a big dollop of cheese batter and close with a tooth pick. Salt and pepper. Fry golden in oil or butter. Place in a baking dish.
  6. You can place the remaining cheese batter on top or just in the baking dish.
  7. Bake in oven for 15 minutes or until the chicken breasts are thoroughly cooked. Remember to remove the tooth pick before serving.
  8. Serve with leafy greens, a generous amount of guacamole and sour cream.

Guacamole

  1. Peel the avocados and mash with a fork, grate or chop the onion finely, squeeze the lime and pour in the juice.
  2. Add tomato, olive oil and finely chopped cilantro. Salt and pepper and blend well.

Rolo Pecan Pretzel Turtles

This is actually the first recipe I ever shared on my blog back in December 6th 2010. I make them every year and my family loves them.

This is a super easy Christmas Treat that the whole family will not be able to get enough of. They look and taste amazing and will be a big hit with the kids and any guests you like enough to share with.

 

Ingredients

1 package of Rolo candies

1 bag of Mini Pretzels

1 bag of Pecans

 

Instructions

Preheat your oven to 300 degrees. Arrange the pretzels in a single layer on a parchment lined cookie sheet. Place one Rolo candy on each pretzel. 

Bake for 5 minutes. While the candy is warm, press a pecan onto each candy covered pretzel. Let them cool for 5 min and enjoy.

They look and taste amazing and will be a big hit with the kids and any guests you like enough to share with. Peyton thinks she doesn’t like pecans so we have switched out a few with Peanut M&M candies. This is my new guilty pleasure and they only take bout 10 minuets start to finish.

Outback Steakhouse Baked Potato

I have to admit I get a little board with baked potatoes. They go great with a lot of things but I thought I would look for a few different ways to make them so my family wouldn't get board with them so easy. One of the places I really enjoy the baked potatoes is Outback Steakhouse. So we set out to see what they do different to make them so good.

Ingredients

  • Russet potatoes
  • 1/2 cup vegetable oil
  • 1 to 2 tablespoons kosher salt

Directions

Preheat oven to 400°. Wash and dry potatoes.

Pour the vegetable oil into a small dish and dip a paper towel into the oil. Rub the oil all over each potato.

Place the potatoes on a baking sheet. Sprinkle salt over both sides of the potatoes. Bake about 1 hour. Check the potatoes for doneness by inserting a fork into one. If it presses through easily, the potato has completed cooking.

Serve the potato with butter, sour cream, cheese, or whatever you enjoy. These turned out great. The salt makes the potato skins delicious. So here is one more side dish to make amazing meals.
