Golden Chicken N Taters

This is my second time making this one. My kids ate it so good last time I am bringing it back for a encore.

Ingredients

1 can cream of chicken soup

1 can cream of celery soup

1/2 cup water

1/4 tsp salt

1 package (32 oz) frozen tater tots

1 package (16 oz) frozen mixed vegetables (I used California style tonight but you can use any kind you wish)

2 cups cubed cooked chicken (I used canned chicken to make it quick and easy)

1 cup shredded cheddar cheese

Preparation

Combine the soups, water and salt, and mix well.

In a greased 13 x 9 baking dish, layer 1/3 of soup mixture, half tater tots, half vegetables, and half the chicken.

Repeat layers.

Top with the final 1/3 of the soup mixture, and sprinkle with cheese.

Cover and bake at 350 for 1 hour. Uncover and bake for 10 more minutes longer until golden brown.

This one is really easy and all kids like tater tots. My 8 year old had seconds both times I have made it. I am sure your kids will love it too. If you try this recipe please a comment below and let me know how you like it. Enjoy!

Ingredients

3/4 lb. boneless, skinless chicken breast, cut into thin strips 6 slices bacon 2 cloves garlic, minced 1 1/2 cup picante sauce or salsa 1 16oz can black beans 1 large red bell pepper 1 t. ground cumin 1/4 t. salt 1/2 cup green onions, sliced 12 flour tortillas 1 1/2 cup cheddar cheese - shredded

Method

Cook bacon in a large skillet over medium heat. Remove bacon from skillet to paper towel to drain.

Pour off all but 3 tablespoons of the bacon drippings. Return skillet to medium heat, add the chicken & garlic, cook until chicken is done.

Stir in salsa beans, red pepper, cumin and salt. Simmer until thickened, about 8 minutes, stirring occasionally.

Stir in green onions and reserved bacon, crumbling bacon.

Lay out tortilla and spoon in about 1/4 cup of the bean mixture in center of tortilla. Top with cheese and roll-up.

Place seam side down in a casserole. Top with extra cheese and salsa. Repeat until mixture and tortillas are gone.

Heat in a 350 degree oven for about 15 minutes and serve with sour cream and guacamole.

Chicken with Corn Sauce

We made this for the first time and we absolutely loved it. Really any time you add bacon to a recipe you just cant go wrong. The Corn sauce tastes amazing.

Ingredients

4 chicken breasts

3 slices of bacon

Corn Sauce

3 oz cream cheese softened

1/4 cup Milk

1 cup sour cream

1 teaspoon dried onion flakes

1/2 teaspoon salt

1/4 teaspoon pepper

1 Can whole kernel corn (drained)

Place chicken on broiler pan. Broil chicken for 4 minutes. Add bacon alongside. Broil, turning chicken and bacon once, for 10 minutes longer; drain bacon on paper towels.

For corn sauce, mix cream cheese and milk in a saucepan over low heat. Heat, stirring, until cream cheese melts; remove from heat. Add sour cream, onion flakes, salt, pepper and corn.

Heat corn sauce to serving temperature over medium heat, about 3 minutes.

Cut chicken into 1/4 inch slices. Place on a serving platter.

Spoon corn sauce over chicken. Crumble bacon and sprinkle over top.
